Happy Friday Everyone! We have another cooking feature to share with you and it is looking YUMMY! Let’s just say it involves licking a bowl and chocolate, need I say more?

Let’s first say Hello to our Feature Chef, Jill!            

jill 7My name is Jillian Anderson and I absolutely love to bake…especially anything that involves sugar! This is a recipe for a delicious chocolate buttercream frosting. The source of this recipe is from www.browneyedbaker.com which has a ton of yummy recipes that haven’t failed me yet! This buttercream has a unique taste, it’s sweet but really light at the same time…which is pretty perfect to me! I hope you enjoy!

 Ingredients:

(Recipe for 1 dozen cupcakes)
-1cup (2sticks) unsalted butter
-4oz (2/3 cup) semi-sweet chocolate chips
-2 1/2 cups of confectioners sugar
-1tsp vanilla extract                       

The total time to make is about 15-25 min depending on what kind of mixer you have. I normally would use my standing mixer (heaven) but I felt more people have a hand mixer so that’s what I chose!

First things first, melt your chocolate chips until smooth. I did the double boiler method over the stove, or you can use a microwave, whichever works best for you. Set chocolate aside to cool.

Next, mix your room temp. Butter on a medium speed for a good 3-5 min. You want it nice and creamy!
Once your done, SIFT in your confectioners sugar. (Sifting helps your buttercream turn out silky smooth, if you don’t sift it can be kindof clumpy) Do one cup at a time, mixing at a medium speed in between.

Okay, now that you’ve put in all the confectioners sugar it’s time to throw in your vanilla and cooled chocolate! Mix at a medium speed for 2 min. (Make sure to scrape the sides of the bowl to get any loose powder)

The end result will be a light and fluffy chocolate buttercream!! Go ahead and frost your cake or just eat it with a spoon : )

My Grandma was always a good cook and after she passed away I told myself that I would carry the family cooking tradition. This is one of my favorite recipes from her cook book. When I was a little girl I actually used to hate this! As I grew older I found love for broiled hamburgers… it is an easy, quick, delicious meal! Enjoy!

Ingredients
  1. 1 lb. hamburger
  2. 1/2 cup chili sauce
  3. 1 teaspoon mustard
  4. 2 tablespoon minced onions
  5. 1/2 teaspoons horseradish
  6. 1 tablespoon Worcestershire sauce
Instructions
  1. Mix all of the above ingredients together in the bowl and form hamburger patties.
  2. Slice hamburger bun in half and butter both halves. Please hamburger patties on buns and broil in oven for 8 minutes.
  3. Garnish with your favorite hamburger ingredients.

This dish was prepared in the Crockpot (low for 8 hours, high for 6 hours). 

Place all of the above ingredients in the Crockpot and let the Crockpot do all of the cooking for you.

Ingredients
  1. Chicken Breasts (4 breasts, cubed)
  2. 1 can Pinto Beans (drain)
  3. 1 can Kidney Beans (drain)
  4. 1 can Corn (drain)
  5. 1 can Diced Tomatoes (large) (do not drain)
  6. 1 can Rotel Mild (large) (do not drain)
  7. 1/2 packet Dry Taco Seasoning
  8. 1/2 packet Dry Ranch
Instructions
  1. Place all of the ingredients in your Crockpot and cook on low for 8 hours or high for 6 hours
  2. Serve in a bowl with your favorite Tortilla chips.
