October Stitch Fix

My October Stitch Fix box came in and I couldn’t have been happier. My stylist listened and sent in some great pieces for the Fall. I almost kept all 5 pieces this time, but I did have to send one item back. First, lets see what I got!



From Left to Right

Grey Sweatshirt Wrap: I fell in love with this piece right away, it’s like a dressed up hooded sweatshirt but I can totally wear this to work. I see this being a staple this winter. 

Oatmeal Sweater/Lace: I’m usually not a fan of lace cutouts in tops but I decided to try this one on. It’s a lightweight sweater that is a bit longer (which I like) and the lace didn’t bother me as much as I thought it would – keep!

Burgundy Poncho: Ahhh I have a love for burgundy, so much so that I got my annual burgundy/red lowlights in my blonde hair the day before the box came in. I’m going to love this piece this winter.

Scarf: Ahhhh my love for plaid and scarfs – enough said.

Jeans: I liked the jeans and they fit well just the color of them was not me. I would have loved if these came in black!

Happy Monday All! I hope you had a great weekend. Last week I was craving some pumpkin…you know with Thanksgiving just around the corner. I’ve already made my pumpkin cookies and pumpkin roll this year so I wanted to make something a bit different plus I wanted to share it! So last week I made these very delicious pumpkin cupcakes with a cream cheese frosting! They were a big hit with those at work. I already want to make more!

  1. 2 cups of flour
  2. 1/2 teaspoon salt
  3. 2 teaspoons cinnamon
  4. 1 teaspoon baking powder
  5. 1 teaspoon baking soda
  6. 4 eggs
  7. 2 cups of sugar
  8. 1 cup vegetable oil
  9. 1 15oz can of Libby's pumpkin
For the Frosting
  1. 8 oz cream cheese, softened (room temp.)
  2. 2 1/2 cups powdered sugar
  3. 1 teaspoon vanilla extract
  4. 2 tablespoons cold milk
  1. Preheat oven to 350 degrees and prep your cupcake pans with cupcake liners.
  2. In a medium bowl, stir together your dry ingredients: flour, salt, cinnamon, baking powder, baking soda.
  3. Using another bowl (or stand mixer), combine eggs, sugar, oil and pumpkin. Add in your flour mixture and beat at a low speed until you have a nice and smooth batter.
  4. Pour mixture in your cupcake liners and bake for about 15 to 19 minutes, until the batter is cooked completely. Take your cupcakes out of the oven and allow cooling time.
For the Frosting (I make as my cupcakes are cooling)
  1. In your stand mixer beat together all of the ingredients: cream cheese, powdered sugar, vanilla and milk until silky smooth.
  2. Apply your frosting to your cupcakes once they are cool.
  3. ENJOY!
