Chocolate Covered Oreos

I was introduced to these little pieces of pure sugar and chocolate heaven a few months back while in  Maryland for a work trip. One of my co-workers Molly introduced me to a double stuffed Oreo with a peanut  butter cup in between, then covered with chocolate. I was in love at first glance. Biting into one of these is amazing because who doesn’t love oreos or peanut butter cups? The only thing I was missing was a glass of milk and a bed for a nap right after. I knew right away that I would want to make these on my own.

These are seriously so easy to make…..all you have to do is melt some milk chocolate chips (I used the microwave) and separate your oreos and place a peanut butter cup in between. Next you take your stuff oreo and dip it in your chocolate to cover. I placed all my completed chocolate covered oreos on some parchment paper to harden. I then transferred them to the fridge to cool. That is it – so SIMPLE and easy!

The other week I was craving chocolate chip cookie brownie’s. I haven’t had them in such a long time and I really wanted some. A chocolate chip cookie brownie bar is the best of both worlds, a brownie and a chocolate chip cookie. I mean what is there not to like? You get the softness of the brownie and the cookie adds a good crunch to it. Combined with a nice glass of milk it is just so GOOD. I used my Chewy-Yummy Chocolate Chip Cookie recipe for the cooking portion and I used just a box mix for the brownies. I like to bake from scratch, just about anything but there is just something about a box mix for  brownies, you can’t go wrong. This is seriously so easy to make!

Chocolate Chip Cookie Brownie Bars

For the Cookies
  1. 3/4 cup unsalted butter, softened
  2. 3/4 cup brown sugar
  3. 14 cup granulated sugar
  4. 1 egg
  5. 2 teaspoon vanilla extract
  6. 2 cups all-purpose flour
  7. 2 teaspoon corn starch
  8. 1 teaspoon baking soda
  9. 1/2 teaspoon salt
  10. 1 cup chocolate chips
For the Brownies
  1. Your favorite box mix
Instructions
  1. Pre-heat oven to 350 degrees F.
  2. Brownies: Follow the directions on the box and pour into a greased 9x12 baking dish.
Cookies
  1. In the bowl of your stand mixer (or any bowl) mix together the butter, brown sugar and granulated sugar until smooth. Add the egg and vanilla extract and mix well together.
  2. Next, mix in the flour, cornstarch, baking soda and salt. Then mix in your chocolate chips.
  3. Once your cookies are mixed, take large portions of the cookie batter and forms balls and drop them into the brownie mix. Gently press them down into the pan.
  4. Bake in oven for about 30-45 minutes until the brownie/chocolate chip mixture is cooked thoroughly. A toothpick can be used to check it. The toothpick should come out smoothly, with no liquid batter on it.
  5. Cut into bars to serve.

Ingredients
  1. 3/4 cup flour
  2. 3/4 cup sugar
  3. 1/4 teaspoon salt
  4. 1 stick of butter (unsalted), soft
  5. 2 eggs
  6. 1 tablespoon of lemon juice
  7. zest from 1/2 lemon (about 1 tablespoon)
  8. Glaze
  9. 1/2 cup powdered sugar
  10. 1 tablespoon lemon juice
Instructions
  1. Preheat oven to 350 degrees
  2. Combine flour, sugar and salt in a large bowl; set aside. In your stand mixer, mix together the butter and flour/sugar/salt mixture until smooth. Next add your eggs, lemon juice and lemon zest. Pour into a 8 x 8 brownie pan and bake for 25 minutes.
  3. You an double up the recipe and bake in a 9 x 13 pan for 30 minutes like I did.
  4. Allow the brownies to cool before you add the glaze.
  5. To make the glaze, whisk together the powdered sugar and lemon juice.
  6. Enjoy!
