Simple Things

I’ve been waiting to capture this type of picture. Dave has one just like this from when 

he was about Macklin’s age. It was so precious watching Macklin laugh and smile

thinking he was cutting the grass. It’s really just the smallest most simple things in 

life that give you the biggest joy and make your heart full. 

oh and this lawn mower blows bubbles which is just cool!

I made a funfetti cheesecake….it was good. Let’s just leave it at that.

but I swear there isn’t a day that goes by that I’m not wearing something from Stitch Fix.

Chobani KeyLime Cheesecake Bars

Who likes yogurt? Who likes cheesecake? and Who like  key lime??? I Do I DO!

I was inspired recently by Chobani #MadeWithChobani project to create a recipe using Chobani yogurt as a main ingredient. Although it is the holidays and I could have created something a bit more ‘festive’ and go with something that I liked and I hope you like it too. I was up to the challenge and with that comes my Chobani KeyLime Cheesecake Bars #MadeWithChobani. Go ahead and ‘like Chobani right now on Facebook by clicking here.

So before I begin, I wanted to give a little run down about why Chobani yogurt is so good for you. To name a few things:

It’s made with real ingredients, natural sweeteners, no rBST and non-GMO Ingredients. Not to mention there are a TON of different flavors to choose from.

If you are going in the new year hoping to eat a little bit better, why not replace some of the things you usually cook with , with Chobani?

Chobani KeyLime Cheesecake Bars

Crust
  1. 10 graham cracker bars
  2. 4 tablespoons melted butter
Filling
  1. 2 8oz. packages of cream cheese (room temp.)
  2. 4 individual serving size cups of Chobani Key Lime Yogurt
  3. 3 large eggs
  4. 3/4 cup sugar
Instructions
  1. Preheat oven to 350 degrees.
Crust
  1. In your food processor pulse your graham crackers until completely blended and then add your melted butter (pulse again to combine). Add your crust mixture to a foil lined 9x9 baking pan. Press down with a spoon or your hand. Bake in the oven for 10 minutes.
Filling
  1. While your crust is baking in the oven, combine your cream cheese and sugar in a stand mixer until completely smooth. Next add your Chobani yogurt and slowly add one egg at a time. Mix the filling until all ingredients are well combined.
  2. By this time your crust should be done in the oven, add your filling mixture on top of your crust and bake in the oven for 35-40 minutes
  3. Let your cheesecake cool. I added an additional smashed up graham cracker on the top as a garnish. You could also add cut up limes or even cool whip.
  4. Allow your cheesecake to cool in the fridge for 3+ hours, or even overnight.
  5. Cut your cheesecake in bars for serving and Enjoy!
