Lemon Glazed Cookies




Don’t those look good? Well they sure were and super easy to make. I’ve been baking a lot of pumpkin lately and was in the baking mood but for something a bit different. Something with lemon sounded really great so I made these cookies. They were quick and easy and just plain ol’ good to eat!

  1. 2 cups of all-purpose flour
  2. 1 tablespoon cornstarch
  3. 1/2 teaspoon baking soda
  4. 1/2 teaspoon salt
  5. 3/4 cup butter, softened (unsalted)
  6. 1 1/4 cups granulated sugar
  7. Zest of 2 lemons (about 1 1/2 tablespoon)
  8. 1 large egg
  9. 1 large egg yolk
  10. 2 tablespoon fresh lemon juice
  11. 1 1/2 teaspoon vanilla extract
  12. Lemon Glaze
  13. 1 cup powdered sugar
  14. 1 1/2 - 2 tablespoon fresh lemon juice
  1. Preheat oven to 350 degrees
  2. In a mixing bowl, whisk together flour, cornstarch, baking soda and salt, set aside.
  3. In a bowl with your electric mixer, whip together the butter, sugar and lemon zest until the mixture is fluffy. Mix in lemon juice and vanilla extract. Slowly add in your dry ingredients and mix until well combined.
  4. Scoop dough out by heaping tablespoons and form balls and drop onto a parchment paper lined cookie sheet.
  5. Bake in oven for 9 to 11 minutes. Allow cookies to cool on cookie sheet for several minutes and place on cooling rack.
  6. Drizzle your lemon glaze as you wish on the cookies (nice and tangy)
Lemon Glaze
  1. In a small bowl whisk together the powdered sugar and lemon juice. You may need to add more lemon juice. Allow the glaze to set at room temperature.
