Chewy – Yummy Chocolate Chip Cookies

I’ve always been a fan of baking, even as a little kid. I remember helping my Mom bake cookies, especially around the holidays. We always had so much fun. We always baked our cookies from scratch, rarely do I ever use or purchase pre-made cookies. I just don’t feel they taste the same, I find that they are always ‘hard’. I like my cookies, but most importantly, chocolate chip cookies to be chewy. I often will re-heat the cookie in the microwave for about 10 seconds just to get it warm again and the chocolate to melt. 
 
So today’s recipe is Chewy-Yummy Chocolate Chip Cookies:
 
If you don’t usually bake from scratch, don’t worry these cookies are very easy and it really does not take much time. I made 2 batches of these cookies over the weekend, one with chocolate chip and the other with peanut chips. From prep time, to cooking and cleaning up it was under 45 minutes. As always pictures will follow in order for the directions for those visual learners like myself. 
 
Preheat oven to 350 F. 
 
In the bowl of your stand mixer (or any bowl) mix together the butter, brown sugar and granulated sugar until smooth. Add the egg and vanilla extract and mix well together.
 
Next, mix in the flour, cornstarch, baking soda and salt. Then mix in your chocolate chips. 
 
I use a Chip Clip Cookie Scoop when baking cookies. I find this scoop works wonderful and all the cookies end up being just about the same size, which makes great for even baking! Bake the cookies for 8-10 minutes and let cool. 
 
I put the cookies in these super cute Holiday Chinese take-out boxes that I found at Meijer for $1.39 a piece. This is a great way to package your holiday treats to give to friends and family!

Ingredients
  1. 3/4 cup unsalted butter, softened

  3. 14 cup granulated sugar
  4. 1 egg
  5. 2 teaspoon vanilla extract
